It's that time of year........are you cooking the regular Thanksgiving sides or are you trying something different? Thanksgiving is our holiday to host so I face this dilemma on a yearly basis. While my family is fine with the repeats, I like to shake things up a bit once in a while. I'm thinking that I need sweet potatoes, two ways this year. I recently tried out a new sweet potato recipe and it went over big in my house. I thought I'd share it with you.
Apple Sweet Potato Casserole
3 cups sliced, peeled tart apples
3 cups sliced, peeled cooked sweet potatoes (I baked them)
3/4 cup packed brown sugar
3/4 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon allspice
3 tablespoons butter
1. Preheat the oven to 350 degrees.
2. Layer half the apples and half the sweet potatoes in a buttered casserole dish.
3. In a small bowl, combine the brown sugar, nutmeg, salt and allspice.
4. Sprinkle half the nutmeg mixture over the sweet potatoes and apple.
5. Dot casserole with half the butter.
6. Repeat process with the remaining ingredients.
7. Cover with foil and bake 15 minutes.
8. Remove foil and baste with pan juices.
9. Bake uncovered, 15 additional minutes.
As a side note, when you bake sweet potatoes, poke holes in them and place them on aluminum foil. They will drip and that will make a mess of your oven.
